Imagine the perfect steak—crispy, juicy, and bursting with flavor, but with a twist that elevates it to a whole new level. Reverse searing a ribeye is already a game-changer, but we’re going to give it a modern spin by starting the process in the air fryer. This method ensures a beautifully even cook from edge to edge while maintaining that coveted melt-in-your-mouth tenderness. We’ll finish the steak with a sizzling sear on the pan to get that irresistible crispy crust that everyone craves.

First, we begin by seasoning the ribeye with a mix of salt, pepper, and a touch of garlic powder. The air fryer will work its magic by circulating hot air around the steak, cooking it to perfection in a fraction of the time compared to traditional methods. This gives you a perfectly even cook without any of the guesswork. The steak remains tender, juicy, and ready to be kissed by a hot skillet, where the real magic happens: that golden, crispy crust.

Once the ribeye has cooked in the air fryer, it’s time for the pan to work its sizzling magic. Heat your skillet to high heat and let it get smoking hot, then throw in a knob of butter and a sprig of fresh thyme. The butter will foam and bubble as the steak hits the pan, creating that rich, savory flavor you won’t be able to resist. A quick sear on both sides will add the perfect finishing touch, sealing in all the flavors and creating that iconic crust.

But we’re not done yet. This ribeye isn’t just any ribeye—it’s paired with a Thai-inspired crack sauce that’ll leave you coming back for more. Imagine a savory, spicy, and sour sauce made with lime juice, fish sauce, garlic, and a touch of sugar and secret ingredient is toasted rice powder. This sauce brings a burst of vibrant flavor to complement the rich, beefy goodness of the steak. A hint of fresh cilantro and a sprinkle of red chili flakes will elevate the dish to new heights, making every bite an unforgettable experience.

Serve your reverse-seared ribeye on a plate, drizzle the Thai crack sauce generously over the top, and enjoy the contrast of rich, tender steak with the bold, tangy kick of the sauce. Whether you’re cooking for a special occasion or just treating yourself to something extraordinary, this dish is sure to impress. Get ready to savor every juicy bite, and maybe even sneak in another forkful of that addictive sauce—you’ve been warned!

Ingredients

  • 1 1 1.5 inch thick ribeye steak

  • 3/4 tsp 3/4 kosher salt

  • 1/4 tsp 1/4 black pepper

  • 1/2 tsp 1/2 garlic powder

  • 2 tbsp 2 butter

  • 5 5 garlic cloves

  • 1 tbsp 1 oil

  • Thai Crack Sauce
  • 5 5 garlic cloves

  • 2 tbsp 2 cilantro

  • 1 1 shallot

  • 1.5 tbsp 1.5 fish sauce

  • 2 tbsp 2 water

  • 1/2 1/2 lime

  • 1 tsp 1 sugar

  • 1 tsp 1 toasted rice powder

  • 3 3 thai chilis

Directions

  • Let your ribeye steak get close to room temperature. Season with salt, pepper, garlic powder, and a tiny bit oil. Preheat air fryer to 250F then cook the steak for 5-6 minutes total and flip halfway through. If your steak is thinner than 1.5 inches, then do 1 minute shorter. If your steak is thicker, then do 1 minute longer. You want the steak to look very slightly brown but majority still pink.
  • Heat up a pan on medium – high, add oil, and sear the steak. Do not touch the steak for about 20 seconds or until there’s a nice sear. Flip the steak and add the knobs of butter and smashed whole garlic pieces. Spoon the melted butter over the steak about 7-8 times then remove the steak from the pan. Let the steak rest for at least 5 minutes before cutting into it to lock in the juices.
  • In a bowl, mix minced garlic, cilantro, minced shallot, fish sauce, water, lime juice, sugar, toasted rice powder, and sliced thai chilis.
  • Enjoy!
