Ingredients

  • 1 1 whole chicken (you can use just thighs, drumsticks, or any other part but bone in is key for flavor)

  • 1 1 large onion

  • 1 1 medium ginger

  • 5 5 star anise

  • 5 5 cloves

  • 2 2 bay leaves

  • 1 1 cinnamon stick

  • 5 5 peppercorns

  • 1.5 tbsp 1.5 rock sugar

  • 1.5 tbsp 1.5 chicken boullion powder

  • 2 tbsp 2 fish sauce

  • 8 cups 8 water

  • rice noodles

  • Toppings
  • green onions

  • sliced onions

  • cilantro

  • lime

  • Ginger Scallion Oil Sauce
  • 2 2 ginger

  • 2 tbsp 2 green onions

  • 3 tbsp 3 neutral oil (veggie, canola, avocado)

  • 1 tsp 1 sesame oil

  • 1/2 tsp 1/2 garlic salt

Directions

  • Slice onions into fourths and char in a pan with sliced ginger. Toast star anise, cloves, bay leaves, cinnamon stick, and peppercorns.
  • Throw in charred onions and ginger, toasted spices, and whole chicken. Fill with water which should cover the chicken. Add chicken powder and rock sugar. Pressure cook for 20 minutes.
  • Release steam and scrape off the scum/fat rendered from the chicken. Season with fish sauce. Do not put too much fish sauce or the soup will become dark in color which is not ideal. If you need more savoriness, add a bit of salt.
  • Ginger Scallion Sauce – Mince ginger and slice green onions. Heat up a pan with oil and fry ginger and green onions for 30 seconds until tender. Season with salt and add sesame oil.
  • Prepare rice noodles, add the soup, top off with green onions/cilantro/onions/lime.
