Ingredients

  • 1 cup 1 whole milk

  • 2 cup 2 heavy cream

  • 4 4 egg yolks

  • 2 2 corn on the cob

  • 1/2 can 1/2 whole kernel corn (unsalted)

  • 2/3 cup 2/3 sugar

  • 1/8 tsp 1/8 salt

  • Crispy Sweet n Salty Corn Topping
  • 1/2 can 1/2 whole kernel corn (unsalted)

  • 1.5 tbsp 1.5 cornstarch

  • 1 tbsp 1 sugar

  • 1/4 tsp 1/4 sea salt

  • 1 cup 1 frying oil (vegetable, canola, or peanut)

Directions

  • Cut corn off the cobs. Save the cobs for later. In a food processor, blend fresh corn and half of the drained canned corn with milk. To a medium sauce pan, add blended corn, heavy cream, corn cobs, sugar, and salt. Simmer on low for about 10 – 12 minutes.
  • Separate your egg yolks and take about 1/2 cup of the warm cream corn mixture into a separate bowl. Whisk in the egg yolks to temper the egg yolks before pouring it back into the sauce pan (we don’t want scrambled eggs). Constantly whisk the cream mixture on the stove while pouring the egg yolk mixture in. Simmer and whisk for another 2-3 minutes.
  • Remove from the stove and strain into a bowl to cool down. We want a smooth corn kernel free creamy corn ice cream base. Fill up your Ninja Creami containers and freeze over night.
  • Coat the other half of the drained corn kernels with cornstarch. Fry in oil that is 375F degrees until golden and crispy. Remove from the oil. Double deep fry at a higher temperature for 20 seconds to lock in the crisp. Sprinkle sugar and salt all over.
  • Blend the frozen sweet corn mixture per instructions of your Ninja Creami. Top off with crispy corn.
  • Enjoy!
