Ingredients

  • 6 6 eggs

  • 1 1 pack quail eggs (can also use canned quail eggs)

  • 3/4 cup 3/4 soy sauce

  • 1 cup 1 water

  • 1/2 cup 1/2 sugar

  • 2 tbsp 2 mirin

  • 2 tbsp 2 rice vinegar

  • 10 10 garlic cloves

  • 1/3 cup 1/3 green onions

  • 1/3 cup 1/3 serrano peppers

  • 1 tbsp 1 sesame seeds

  • 1 tbsp 1 sesame oil

Directions

  • Bring a pot of 1 inch water up to a boil. Place eggs into the boiling water and cover with lid. The water should not cover the eggs fully or else there is higher chance of cracking. For a jammy egg yolk, boil chicken eggs for 6 minutes and quail eggs for 4 minutes and immediately dunk in ice water. Tap to crack the egg shell and start peeling from the bottom heavy side of the egg to release the membrane to peel easily.
  • In a container with a lid, mix soy sauce, water, sugar, mirin, rice vinegar, minced garlic, green onions, Serrano peppers, sesame oil, and sesame seeds. Add the peeled eggs and marinate in the fridge overnight. Best served with white rice.
