Ingredients

  • 3 3 boneless skinless chicken thighs

  • 1 tsp 1 garlic salt

  • 1 tsp 1 garlic powder

  • 1/2 tsp 1/2 onion powder

  • 1/2 tsp 1/2 paprika

  • 1/8 tsp 1/8 pepper

  • 1/2 1/2 onion

  • 1 1 jalapeno pepper

  • 3 3 garlic cloves

  • 2 tbsp 2 Buldak hot sauce (adjust to your desired heat level)

  • 1/3 cup 1/3 water

  • 1 tbsp 1 cornstarch

  • 1 box 1 store-bought puff pastry

  • 3/4 cup 3/4 mozzarella cheese

  • Egg Wash
  • 1 1 egg

  • 1 tbsp 1 water

  • Toppings

  • Parmesan cheese

Directions

  • Remove any excess fat from chicken thighs. Pan sear chicken thighs on medium heat with oil and season with garlic salt, paprika, garlic powder, onion powder, pepper. Cook until internal temperature reaches 165F or it should take 4-5 minutes on each side depending how thick your chicken is. Remove from pan.
  • Clean up the burnt bits from the pan if there are any. Add a bit more oil and sauté sliced onions, minced garlic, and diced jalapeños. Shred the chicken and throw it back in. Mix a slurry of cornstarch and water and add to the pan. Add the Buldak sauce and let everything thicken for about 2 minutes.
  • Partially thaw the puff pastry and cut into 6 rectangles from one sheet. There should be two sheets in a box so one box will make 6 hot pockets. Layer on mozzarella cheese, chicken filling, and more mozzarella cheese.
  • Beat an egg and mix with water for egg wash. Brush the sides of the puff pastry to glue the two pieces together and use a fork to dent the sides. Make slits on top to allow air to flow out while baking. Brush egg wash on top. Place in oven at 400F degrees for 18-20 minutes or until it’s golden and puffed up.
  • Brush melted butter on top and sprinkle on chives and grated parmesan cheese.
