If you love to play with your food, you will have the best time making this dish. It’s like edible play dough! You also get to bang noodles on the table which I think is the best part. Imagine how impressed your friend would be when you tell them you hand made and hand pulled these thick chewy noodles yourself! There’s a lot of labor and love that goes into making these noodles, but trust me, it’s worth it. The beauty of this dish is that there’s room for error and the noodles do not need to be perfectly sized. I know you will enjoy the process of making it just as much as you will enjoy devouring it.

Ingredients

  • 3 cups flour

  • 1 cup water

  • 1 tsp salt

  • 2 tbsp oil

  • Minced Beef
  • 1/2 lb ground beef

  • 2 tbsp oyster sauce

  • 1/4 onion

  • 1 tsp cornstarch

  • Spicy Sauce
  • 4 tbsp soy sauce

  • 2 tbsp sichuan pepper flakes

  • 2 tbsp vegetable oil

  • 2 tbsp sesame oil

  • 2 tbsp red or black vinegar

  • 2 tbsp garlic

  • 4 tbsp green onions

  • 2 tbsp cilantro

  • 2 tsp sugar

  • 2 tsp sesame seeds

Directions

  • Mix flour, water, and salt. Knead it into a ball and let it rest at room temperature for 30 mins. Knead the dough more and section into 8 hotdog like pieces, cover in oil and let it rest for 1 hr. Pull and stretch each dough roll and bang against counter to stretch without ripping. Boil in water for about 5 minutes or until desired chewiness.
  • In a pan, fry the ground beef with oil, onion, and cornstarch
  • Drain the noodles and place into a serving bowl with all the spicy sauce ingredients. Heat up the vegetable oil and sesame oil to pour over all the spices and mix
  • Enjoy!
