Ingredients

  • 1 1 large ripe mango (or 2 medium), peeled and diced (reserve some for garnish)

  • 1/2 cup 1/2 small tapioca pearls (sago)

  • 6 cups 6 water (for sago)

  • 1 cup 1 coconut milk

  • 2 tbsp 2 condensed milk (or sugar/honey to taste)

  • Silk Cold Foam Creamer

  • ice

Directions

  • Cook the sago (tapioca pearls):
    Bring a pot of water to a boil and add the tapioca pearls. Cook for 10 minutes, stirring occasionally, until pearls turn mostly translucent with a small white dot in the center. Turn off the heat, cover, and let sit for another 5-10 minutes. Drain and rinse under cold water to prevent sticking. Make sure there’s no more white dot in the middle.
  • Blend the mango base:
    For a smoothie consistency: In a blender, combine diced mango (save some chunks for garnish), coconut milk, condensed milk, water, and ice cubes. Blend until smooth and creamy. Taste and adjust sweetness if needed.

  • Assemble the drink:
    Divide the cooked sago pearls evenly into serving glasses. Pour the mango blend on top until glasses are about ¾ full. Add more ice and coconut milk if you’re doing the latte version. Top off with the cold foam.
