These kimchi and corn crispy pancakes are the perfect pair to an ice cold beer. I love the addition of corn in these fritters because of the slight sweetness you get and the pop in every bite. The cubes of spam adds an addictive savoriness and the crispy edges keep you coming back for more. If you want to be the crowd pleaser at any potluck or gathering, bring these and I promise you will be everyone’s favorite. The “homemade” ranch is the icing on the cake where everyone will be asking you for the recipe.

Ingredients

  • 1 can whole kernel corn

  • 1/2 can Spam

  • 3/4 cup kimchi

  • 1/4 cup green onions

  • 2 serrano peppers

  • 1/4 cup shredded mozzarella cheese

  • 3/4 cup flour

  • 2 tbsp cornstarch

  • 1 egg

  • 1 tbsp gochujang

  • 1 tsp sesame seeds

  • Ranch Dipping Sauce
  • 4 tbsp sour cream

  • 2 tbsp mayonaise

  • 1 tsp Hidden Valley Ranch seasoning

  • 1 tbsp milk

Directions

  • Chop up kimchi, spam, and green onions
  • Combine all ingredients into a mixing bowl, the batter should be fairly thick like a thicker pancake batter
  • Heat up a pan with 2 tbsp of vegetable oil and scoop up the batter onto the pan, fry for 2 minutes on each side or until golden brown and crispy and flip until fully cooked
  • Mix sour cream, mayonnaise, ranch seasoning, and milk for the ranch dipping sauce
  • Enjoy!
