Ingredients

  • 2 2 ribeye steaks

  • 8 oz 8 or 2 sticks of unsalted butter

  • 2 tbsp 2 chives

  • 1 tbsp 1 rosemary

  • 1 tbsp 1 thyme

  • 1 tsp 1 lemon zest

  • 1 tsp 1 lemon juice

  • 1 1 shallot

  • 1 1 whole garlic head

  • 1 tsp 1 garlic salt

  • 1/2 tsp 1/2 chili flakes

  • Mashed Potatoes
  • 2 2 russet potatoes

  • 1 tbsp 1 salt (to season boiling water)

  • 1/4 cup 1/4 heavy cream

  • 3 tbsp 3 garlic herb compound butter

  • 1 tsp 1 garlic salt

  • 1/4 tsp 1/4 pepper

  • 1 tbsp 1 chives

Directions

  • Compound Butter – Let your butter get to room temperature so it’s soft enough to work with.
  • Compound Butter – Cut off the top of your garlic head to expose each clove and drizzle extra virgin olive oil with salt and pepper and wrap in foil. Air fry at 350F degrees for 40 mins.
  • Compound Butter – Mince your herbs and shallot, zest your lemon, and combine in a bowl with the butter. Season with salt and pepper and squeeze your roasted garlic into the mixture. Mix until everything is well combined.
  • Compound Butter – Roll compound butter in saran wrap and place in the fridge to set for at least 20 minutes.
  • Cook the Steak – Salt and pepper your steak and sear in a pan with hot oil. Once seared, throw in a couple sprigs of thyme and 3 tbsp of the compound butter. Baste the steak until your desired doneness. Remove steak and rest for 5 minutes before cutting.
  • Mashed Potatoes – Throw salt into a pot of boiling water and boil diced potatoes until tender.
