Ingredients

  • 3 3 eggs (150g)

  • 1 cup 1 water (~300g)

  • 1/8 tsp 1/8 msg

  • Garlic Chili Oil
  • 5 5 garlic cloves

  • 3 tbsp 3 green onions

  • 1 tsp 1 sesame seeds

  • 1 tsp 1 gochugaru

  • 1 tsp 1 sugar

  • 1 tsp 1 red pepper flakes

  • 2 tbsp 2 soy sauce

  • 1 tsp 1 red vinegar

  • 1 tbsp 1 sesame oil

  • 2 tbsp 2 vegetable oil

Directions

  • Weight out your eggs and water for a 1:2 ratio where you double the weight of water. Typically one serving is 3 eggs (150g) and 1 cup water (300g). Whisk together in a bowl and add a pinch of msg which is optional. 
  • Strain the egg mixture through a sifter to get a smooth texture. Remove all air bubbles and foam on top with a spoon. Steam in a pot of boiling water with a plate covering the eggs so water does not get in. Cover the pot with a lid and steam for 15 minutes on medium low heat. Carefully remove the plate and steamed eggs.
  • In a bowl mix, minced garlic, green onions, sesame seeds, gochugaru, chili flakes, sugar, soy sauce, red vinegar. Heat up neutral oil and sesame oil and pour directly in the bowl of spices. Pour chili oil mixture over the freshly steamed eggs.
  • Pair with white rice and enjoy!
