Ingredients

  • 1 1 block of extra firm tofu

  • 2 tbsp 2 vegetable oil

  • 3 tbsp 3 cornstarch

  • 2 cups 2 cooked white rice

  • 1 1 avocado

  • seaweed sheets

  • rice paper

  • 4 tbsp 4 vegetable oil (frying oil)

  • Firecracker Sauce
  • 2 tbsp 2 sriracha

  • 2 tbsp 2 green onions

  • 2 tbsp 2 water

  • 1 tbsp 1 soy sauce

  • 1 tbsp 1 rice vinegar

  • 1 tbsp 1 honey

  • 1 tbsp 1 gochujang

  • 1 tsp 1 sesame seeds

  • Spicy Mayo Sauce
  • 1 tbsp 1 sriracha

  • 2 tbsp 2 Kewpie mayo

Directions

  • Press tofu with pieces of paper towel and a heavy object like a pan for at least 30 minute to release as much moisture as possible so it can get crispy. Crumble tofu into small bite size pieces with your hands and coat with cornstarch and oil. Pop into the pre heated oven at 400F degrees for about 30 minutes or until tofu is crispy.
  • Combine sriracha, green onions, water, soy sauce, rice vinegar, honey, gochujang, and sesame seeds and pour into a pan at low heat. Toss the crispy tofu in the pan to coat.
  • Run a rice paper under water and place a 4in x 2in rectangle piece of seaweed down in the center. Stack on rice, slices of avocado, and firecracker tofu. Wrap the rice paper from side to side over, then top over and roll tightly.
  • Fry each roll on the pan with oil until all sides are crispy.
  • Mix mayo and sriracha.
