Ingredients

  • 1 lb 1 thinly sliced pork belly

  • 2 2 packs enoki mushrooms

  • 1/4 tsp 1/4 garlic salt

  • 1/4 tsp 1/4 pepper

  • green onions

  • sesame seeds

  • serrano peppers

  • rice or noodles

  • Fire Garlic Sauce
  • 1 1 head of garlic

  • 3 tbsp 3 gochujang

  • 3 tbsp 3 gochugaru

  • 2 tbsp 2 soy sauce

  • 1.5 tbsp 1.5 brown sugar

  • 1 tsp 1 sesame oil

  • 1 tsp 1 sesame seeds

  • 2.5 cups 2.5 water (add more if needed)

Directions

  • Sear pork belly on the pan and lightly season with garlic salt and pepper. Cut into bite size pieces. Use a paper towel to soak up the rendered fat.
  • Mix all ingredients of the fire garlic sauce and pour over the pork belly. Cover with lid and let simmer and tenderize for about 30 minutes. Add more water if needed.
  • Cut the dirt roots off the enoki mushroom and rinse under water. Slice the enoki mushrooms flat horizontally so it’s still somewhat intact. Slice Serrano peppers. Place mushrooms and peppers in the pork belly and sauce. Simmer for 5 minutes and add noodles or rice at this point. Top off with green onions and sesame seeds.
