Ingredients

  • 1 can 1 quail eggs

  • 1 1/4 cup 1 1/4 flour (1 cup for the batter and 1/4 cup to coat eggs)

  • 1/4 cup 1/4 cornstarch

  • 1 cup 1 water

  • 1 tsp 1 paprika

  • 1 tbsp 1 garlic salt

  • 1 tbsp 1 garlic powder

  • 1/2 tsp 1/2 orange food coloring (optional)

  • frying oil, vegetable or canola

  • Sweet Sticky Sauce
  • 1/4 cup 1/4 brown sugar

  • 1 tbsp 1 flour

  • 1/4 tsp 1/4 garlic salt

  • 1 tbsp 1 soy sauce

  • 3 3 garlic cloves

  • 1/4 tsp 1/4 pepper

  • 1/2 tsp 1/2 chili flakes

  • 1 cup 1 water

  • Spicy Vinegar Sauce
  • 1/2 cup 1/2 vinegar

  • 1.5 tbsp 1.5 fish sauce

  • 1 tbsp 1 water

  • 1 tbsp 1 sugar

  • 1 1 shallot

  • 3 3 garlic cloves

  • 2 2 thai chilies

Directions

  • Sweet Sauce – Add brown sugar, flour, minced garlic, garlic salt, soy sauce, garlic, pepper, chili flakes, and water to a small pot. Simmer on the stove on medium heat until thickened.
  • Spicy Vinegar Sauce – Mix vinegar, fish sauce, water, sugar, minced shallots, minced garlic, slice thai chilies.
  • Quail Eggs – Drain canned quail eggs and toss into flour. Make the batter by mixing flour, cornstarch, garlic salt, paprika, garlic powder, and water (add the food coloring in this step too if you’re including it).
  • Quail Eggs – Drop each flour coated quail egg into the batter and fry in hot oil of at least 350F degrees. You can also test if the oil is hot enough by placing a wooden chopstick in it and see if bubbles immediately form. Fry for 2 minutes and remove. Double deep fry at a high temperature for 20 seconds to ensure the crispiness is locked in.
  • Quail Eggs – Immediately season with garlic salt and garlic powder after fry.
