This crispy air fried chicken with ginger scallion oil has been on repeat for my week night dinners because it’s so easy and delicious to make. It is the shortcut way to the traditional and well known Hainanese Chicken Rice dish. The star of the show is the addictive ginger scallion oil that makes every bite so flavorful and rich. The ginger scallion oil paired with the crispy juicy chicken thighs and rice make the perfect satisfying meal. Let’s get into it!

Ingredients

  • 4 chicken thighs

  • 1 tsp garlic salt

  • 1⁄4 tsp pepper

  • 1⁄4 cup minced ginger

  • 1⁄4 cup green onions

  • 1⁄4 cup vegetable oil

  • 1 tsp sesame oil

Directions

  • Season the chicken thighs with salt and pepper and pop into air fryer for 25 mins at 380F degrees
  • Mince ginger and slice green onions
  • Heat up oil in a small pot and throw in ginger and green onions for about 30 – 45 seconds
  • Season the ginger scallion oil with salt, pepper, and sesame oil
  • Serve chicken with ginger scallion oil and rice
  • Enjoy!
