Ingredients

  • 2 lb 2 low moisture part skim mozzarella cheese block

  • 1/2 cup 1/2 flour

  • 2 2 eggs

  • 1 cup 1 Italian bread crumbs

  • avocado oil spray

  • Nashville Hot Glaze
  • 4 tbsp 4 unsalted butter

  • 1/4 tsp 1/4 garlic salt (adjust for tasting)

  • 1 tsp 1 garlic powder

  • 1/2 tsp 1/2 paprika

  • 1 tsp 1 cayenne pepper

  • 1/2 tsp 1/2 sugar

  • 1 tsp 1 Red Hot’s buffalo wing hot sauce

  • Homemade Ranch
  • 1/2 cup 1/2 mayo

  • 1/2 cup 1/2 buttermilk

  • 1 tbsp 1 ranch powder seasoning (I like using Hidden Valley)

  • 1 tbsp 1 chives

  • 1/4 tsp 1/4 garlic powder

  • 1 tbsp 1 milk (to thin out if needed)

Directions

  • Cut the mozzarella block into 6-8 pieces depending how big you want your sticks. Set up a dredging station with 1 bowl with beaten eggs, 1 plate with flour, 1 plate with breadcrumbs. Coat the cheese blocks with flour, then egg, then pack on breadcrumbs. I like to do this twice so the breading is thick enough to cover all surface area. Place in freezer for at least 1 hour.
  • In a bowl, combine mayo, buttermilk, ranch seasoning, garlic powder, and chives. If the ranch is too thick, add some milk to thin it out.
  • Place cheese blocks into air fryer. Spray with a light coat of oil. Air Fry at 400F degrees for 8-10 minutes or until golden brown. Flip halfway through and watch out for the cheese oozing out a bit.
  • In a small sauce pan on medium heat, add butter, garlic salt, garlic powder, paprika, cayenne pepper, sugar, and hot sauce. Stir and combine for 2-3 minutes. Coat each mozzarella stick in the sauce. Top off the mozzarella sticks with grated parmesan cheese and chives.
