Ingredients

  • 2 cups 2 sushi rice

  • 2 cups 2 water

  • 1/4 cup 1/4 rice vinegar

  • 2 tbsp 2 sugar

  • 3/4 tsp 3/4 salt

  • 1 1 avocado, sliced

  • 1 1 cucumber, sliced

  • 1 1 jalapeno, sliced

  • 2 tbsp 2 furikake

  • Sushi Coating
  • 3 3 nori sheets

  • 1 cup 1 flour

  • 2 2 eggs

  • 1/4 cup 1/4 water

  • 2 cups 2 Japanese panko crumbs

  • neutral oil for frying (vegetable, canola, etc.)

  • Eel Sauce
  • 1/4 cup 1/4 mirin

  • 1/4 cup 1/4 soy sauce

  • 2 tbsp 2 sugar

  • Spicy Mayo
  • 1/4 cup 1/4 mayo

  • 1 tbsp 1 sriracha

Directions

  • Rinse the sushi rice until the water runs mostly clear. Cook the rice with the water according to your rice cooker or stovetop directions.
  • While the rice is still warm, gently fold together the rice vinegar, sugar, and salt until evenly incorporated. Allow the rice to cool until just warm.
  • In a small saucepan, combine the soy sauce, mirin, and sugar. Simmer for 5–8 minutes, stirring occasionally, until the sauce thickens slightly. Remove from the heat and let cool.
  • Mix together the mayonnaise and sriracha to make the spicy mayo. Refrigerate until ready to use.
  • Heat the frozen BBQ eel according to the package directions.
