Ingredients

  • 2 cups 2 shredded chicken

  • 2 2 large pita wraps

  • 1/4 cup 1/4 toum

  • 1/4 cup 1/4 chopped parsley

  • 1/4 cup 1/4 tiny dill pickles

  • 1 tsp 1 sumac

  • 2 tbsp 2 neutral oil

  • Pickled Red Onions
  • 1 1 red onion, thinly sliced

  • 1/2 cup 1/2 vinegar

  • 1/2 cup 1/2 hot water

  • 1.5 tbsp 1.5 sugar

  • 1/2 tsp 1/2 salt

  • Paprika Oil
  • 3 tbsp 3 neutral oil

  • 1 tsp 1 paprika

  • 1/4 tsp 1/4 salt

Directions

  • Pickle the onions
    Thinly slice the red onion and place it in a bowl or jar.
    In a separate bowl, mix hot water, vinegar, sugar, and salt until dissolved.
    Pour the liquid over the onions, making sure they are fully submerged.
    Let sit for at least 15 to 20 minutes before using.
  • Assemble the Wrap
    Split each pita pocket into two pieces. Spread toum onto one piece, then layer with rotisserie chicken, pickled red onions, pickles, and parsley. Fold tightly into a wrap, tucking in the sides. Double wrap the pita with the second piece.
  • Prepare Paprika Oil
    In a small bowl, mix neutral oil and paprika.
