Ingredients

  • 3 packs 3 Maruchan Saucy Noodles

  • water for boiling

  • 1/2 cup 1/2 milk or heavy cream

  • 1/4 cup 1/4 freshly grated parmesan cheese

  • 2 2 bacon strips

  • 1/4 tsp 1/4 black pepper

  • 1/4 cup 1/4 reserved starchy noodle water

  • 1/4 tsp 1/4 chili flakes (optional)

  • Steak
  • 10 oz 10 ribeye steak

  • 2 tbsp 2 avocado oil

  • salt and pepper, to taste

  • 2 tbsp 2 unsalted butter

  • 5 5 smashed garlic cloves

  • 2 2 sprigs of rosemary

  • Optional Toppings
  • chives

  • egg yolk

  • freshly grated Parmesan cheese

Directions

  • Cook the Bacon
    Heat a skillet over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside, leaving the rendered fat in the pan.
  • Cook the Steak
    Season ribeye steak generously with salt and pepper. Heat a separate skillet over medium high heat and sear steak for 2 to 3 minutes per side depending on thickness.
    Lower heat and add butter, garlic, and rosemary to the pan. Tilt the pan and continuously spoon the melted butter over the steak for about 1 minute. Remove steak from pan and allow it to rest before slicing thinly.
  • Cook the Noodles
    Cook Maruchan Saucy Noodles according to package instructions. Reserve 1/4 cup of noodle cooking water before draining.
  • Make the Carbonara Style Sauce
    In the pan with rendered bacon fat on low heat, stir in 1/4 of the sauce packets (you can add more later on), milk, cooked bacon, and parmesan cheese. Add a small splash of reserved noodle water if needed to loosen the sauce. Stir until creamy and fully combined. Return noodles to the pot or skillet.
  • Assemble the Dish
    Divide noodles into two bowls. Top each bowl with sliced ribeye steak. Garnish with extra parmesan and chives. Optional to add an egg yolk on top.
