Ingredients

  • 4-6 4-6 boneless chicken thighs (I prefer using skin on)

  • 2 tbsp 2 olive oil

  • 1 tsp 1 garlic salt

  • 1/2 tsp 1/2 pepper

  • 2 tbsp 2 cornstarch

  • 1 pack 1 enoki mushrooms

  • 2 cups 2 cooked white rice

  • 1 1 serrano pepper

  • Fire Garlic Sauce
  • 1 1 head of garlic

  • 3 tbsp 3 gochujang (korean red pepper paste)

  • 2 tbsp 2 soy sauce

  • 3 tbsp 3 gochugaru (korean red pepper flakes – adjust for spice)

  • 1.5 tbsp 1.5 brown sugar

  • 1/2 tsp 1/2 sesame seeds

  • 1 tsp 1 sesame oil

  • 1/3 cup 1/3 water (adjust as needed)

Directions

  • Cut chicken thighs into bite size pieces, coat in oil, garlic salt, pepper, and cornstarch. Heat up medium sized pan with a bit of oil, fry chicken thigh until slightly browned. Add enoki mushrooms on top.
  • Combine minced garlic, gochujang, gochugaru, soy sauce, brown sugar, sesame oil, sesame seeds, and water. Pour the sauce all over the pan on medium heat. Once simmering, turn heat to low and cover with lid and cook for 3-4 minutes. Add sliced Serrano peppers. Add 1/4 cup more water at a time if needed. The sauce should be gravy-like consistency.
  • Add in cooked white rice, top off with sliced green onions, and sesame seeds.
