Ingredients

  • 1/2 cup 1/2 dried tapioca pearls (black boba)

  • 6 cups 6 water

  • 1/4 cup 1/4 honey

  • 3 tbsp 3 brown sugar

  • Matcha Layer
  • 2 tsp 2 matcha powder

  • 3 tbsp 3 hot water

  • Strawberry Layer
  • 1 cup 1 fresh strawberries (or 3 tbsp strawberry jam)

  • 1 tbsp 1 sugar (adjust to taste if using fresh strawberries)

  • Other
  • 1 cup 1 milk (dairy, oat, almond, etc.)

  • ice

  • Silk Cold Foam Creamer

Directions

  • Make the honey boba:
    Bring 6 cups of water to a boil. Add the tapioca pearls and cook according to package directions (usually 20–30 minutes). Turn the heat off and let the boba sit with the lid on for 20 minutes. Drain and toss the pearls in honey, brown sugar, and 2-3 tbsp of water over low heat. Stir for 3-4 minutes, turn off the heat, and keep covered until serving so they stay warm and chewy.
  • Prepare the strawberry layer:
    If using fresh strawberries: blend with sugar until smooth.
    If using jam: stir jam with a splash of warm water to loosen into a pourable sauce.
  • Prepare the matcha:
    In a small bowl, whisk matcha with hot water until smooth and frothy. Sweeten with honey or sugar if desired.
  • Assemble the drink:
    Add honey boba to the bottom of a tall glass.
    Spoon in the strawberry purée layer.
    Add ice, then pour in the milk.
    Slowly pour the whisked matcha on top for a layered effect.
    Finish with a dollop of cold foam if using.
