Ingredients

  • 2 2 medium russet potatoes

  • 1/3 cup 1/3 cornstarch

  • 1/3 cup 1/3 tapioca or potato starch

  • 1 tsp 1 garlic salt

  • 1 tsp 1 paprika

  • 1 tsp 1 garlic powder

  • 1/2 tsp 1/2 five spice powder

  • 2 tbsp 2 neutral oil

  • basil

  • frying oil (neutral oil)

  • sweet chili sauce

  • Seasoning After Fry
  • 1 tsp 1 five spice powder

  • 1 tsp 1 garlic salt

  • 1 tsp 1 garlic powder

  • 1 tsp 1 chili powder

  • 1/2 tsp 1/2 sugar

  • 1/2 tsp 1/2 white pepper

  • 1/2 tsp 1/2 paprika

Directions

  • Peel and slice potatoes. Soak in ice water for 20 minutes. Parboil in a pot of water for 5-7 minutes. Drain and dry them off with a paper towel. Coat in a drizzle of oil, cornstarch, tapioca starch, garlic salt, paprika, and garlic powder.
  • Heat up frying oil to 375F degrees and carefully fry basil and set aside. Then drop the fries in the basil infused oil. Fry until golden brown and crispy on medium heat. Remove, rest for 5 minutes, and turn the heat to high. Double deep fry the fries at the higher temperature for a couple minutes to lock in the crisp.
  • Combine five spice powder, garlic salt, garlic powder, chili powder, sugar, white pepper, and paprika. Sprinkle over the fries right after frying. Serve with sweet chili sauce.
