Ingredients

  • 1 lb 1 party wings

  • 2 2 egg whites

  • 1/2 cup 1/2 tapioca starch

  • 1/2 cup 1/2 potato starch

  • 5 5 garlic cloves

  • 1 tbsp 1 garlic salt

  • 1 tbsp 1 soy sauce

  • 1 tsp 1 five spice powder

  • 1/2 tsp 1/2 white pepper

  • sweet chili sauce

  • basil

  • frying oil (vegetable, canola, or peanut oil)

  • Seasoning After Fry
  • 1 tsp 1 five spice powder

  • 1 tsp 1 garlic powder

  • 1 tsp 1 garlic salt

  • 1 tsp 1 chili powder

  • 1 tsp 1 sugar

  • 1/2 tsp 1/2 white pepper

Directions

  • In a bowl, mix wings with egg whites, tapioca starch, potato starch, minced garlic, garlic salt, soy sauce, five spice powder, and white pepper.
  • Heat up frying oil to 375F degrees or you can test if the oil is ready by sticking a wooden chopstick in and check if bubbles immediately form. Toss in basil to fry for 10 seconds until crispy. Pull it out and set it aside.
  • Fry chicken wings in the basil infused oil until golden and crispy (8-10 minutes). Do not over crowd the pot. Remove chicken to rest for a few minutes. Double deep fry the chicken at a higher temperature for 1 minute to lock in the crispiness.
  • Mix five spice powder, garlic powder, garlic salt, chili powder, sugar, and white pepper. Sprinkle over the hot chicken wings and basil right after fry. Serve with sweet chili sauce.
