If you’ve ever had the pleasure of savoring Thai Mango Sticky Rice, you know it’s a match made in dessert heaven: sweet, creamy coconut rice paired with juicy, ripe mango. Well, hold onto your taste buds, because we’re about to take that iconic treat and turn it into a cozy, comforting rice pudding! This Thai Mango Sticky Rice-inspired rice pudding brings all the tropical flavors you love into a creamy, spoonable form—perfect for a cozy night in or impressing guests at your next dinner party.

Imagine the classic rice pudding with arborio rice—soaked and softened with coconut milk—now transformed into a smooth, velvety pudding. The rice takes on a slightly richer, silkier texture, absorbing all that coconut goodness. We then fold in a touch of condensed milk, while a hint of vanilla keeps everything warm and cozy. The result? A dreamy, subtly sweet base that’s a nod to the flavors of Thailand, but with a comforting, dessert-y twist.

And then, of course, we can’t forget the mango! The tart-sweet fruit slices are the perfect fresh contrast to the pudding’s creamy richness, adding a burst of color and flavor that elevates the dish to something truly special. The mango’s vibrant orange hue is not only beautiful to look at, but its juicy sweetness provides a refreshing contrast to the luscious coconut pudding, making each bite a balanced delight.

If you want, for a little extra flair, you can top off the pudding with a sprinkling of toasted sesame seeds or crushed peanuts, adding just the right amount of crunch to complement the soft, creamy pudding and smooth mango slices. It’s the perfect texture contrast that’ll have you going back for seconds (or thirds!). You can also drizzle a little extra condensed milk on top for that extra creamy finish.

This Thai Mango Sticky Rice-inspired rice pudding is an irresistible fusion of two beloved treats, offering a bit of exotic indulgence with every spoonful. Whether you’re enjoying it as a sweet snack or serving it as a show-stopping dessert, it’s guaranteed to transport you to a tropical paradise. Ready to give your taste buds a vacation? Ingredients

  • 2 cups 2 milk

  • 1 cup 1 water

  • 1/4 cup 1/4 coconut cream

  • 1/4 cup 1/4 condensed milk

  • 1 1 cinnamon stick

  • 1 tsp 1 vanilla extract

  • 1 1/2 cups 1 1/2 arborio rice

  • 2 2 Ataulfo mangos

  • mint for garnishing

Directions

  • In a pot over medium heat, combine the milk, water, coconut cream, condensed milk, cinnamon stick, and vanilla extract. Stir and bring to a gentle simmer.
  • In a separate pan, add the arborio rice. Gradually ladle in the milk mixture, one scoop at a time, stirring frequently. Continue adding the liquid as the rice absorbs it, until the rice is fully cooked and tender. This process should take about 30-40 minutes.
  • Once the rice is tender and creamy, remove it from the heat and let it cool to room temperature.
  • Slice the mangoes and garnish the rice pudding with fresh mint leaves. For extra sweetness, drizzle with additional condensed milk.
  • Serve the mango sticky rice-inspired pudding chilled or at room temperature.
  • Enjoy!
