Ingredients

  • 5 5 large yellow onions

  • 2 tbsp 2 unsalted butter

  • 1 tbsp 1 olive oil

  • 3 3 garlic cloves

  • 1/2 cup 1/2 dry white wine (I used Sauvignon blanc)

  • 4 cups 4 beef stock

  • 1 tsp 1 garlic salt

  • 1 tsp 1 black pepper

  • 2 2 sprigs of thyme

  • Toppings
  • 1 1 baguette

  • 2 tbsp 2 unsalted butter

  • 3 tbsp 3 chives

  • 1/2 cup 1/2 gruyere cheese

Directions

  • Thinly slice onions and mince garlic. Heat up a pan on medium high heat and add olive oil, butter, and onions. Let the onions brown a little before stirring (should take 3-4 minutes), once the onions are slightly browned, turn the heat down to medium – medium/low and slowly caramelize for another 15 minutes while stirring occasionally.
  • Toss the minced garlic into the pan with onions and deglaze the pan with white wine. Let the wine burn off the alcohol or 30 secs then add the beef stock. Season with garlic salt and pepper. Add the sprigs of thyme and fish it out after simmering for 5 minutes.
  • Ladle the French onion soup into an oven safe ramekin. Butter and toast baguette slices to place on top of the French onion soup. Add a handful of shredded gruyere cheese and bake in the oven at 400F for 3-4 minutes then broil on high for 1-2 minutes while watching it carefully so it doesn’t burn.
  • Top off the French onion soup with minced chives.
