Ingredients

  • 2 cups 2 milk

  • 6 6 large eggs

  • 3/4 cup 3/4 ap flour

  • 1/4 cup 1/4 cornstarch

  • 2.5 tbsp 2.5 matcha powder

  • 1/3 cup 1/3 sugar

  • 2.5 tbsp 2.5 unsalted butter

  • Whipped Cream
  • 1 quart 1 heavy whipping cream

  • 1 cup 1 powdered sugar

  • 2 tbsp 2 vanilla extract

Directions

  • Combine eggs, milk, flour, cornstarch, matcha powder, sugar, cooled melted butter into a blender.
  • Strain batter so there’s no lumps.
  • Brush a medium sized pan with neutral oil on low heat, add a ladle of the batter at the 6 o’clock position of the pan and turn clockwise until batter thinly covers the whole pan. Use a silicone spatula to lift the edges and use fingers to flip the crepe.
  • Mix heavy whipping cream powdered sugar and vanilla extract until stiff peaks form. Slowly add the powdered sugar. Refrigerate the whipped cream until all crepes are made and cooled down.
  • Spread a thin layer of cream on each layer of crepe until there’s no more crepe. Sprinkle matcha powder on the last layer of whipped cream.
