Ingredients

  • 2 packs 2 packs oyster mushrooms

  • 1/2 cup 62 g flour

  • 2/3 cup 80 g tapioca starch

  • 1 cup 235 ml water

  • frying oil

  • basil

  • Seasoning After Fry
  • 1 tsp 1 five spice powder

  • 1 tsp 1 garlic powder

  • 1 tsp 1 chili powder

  • 1/2 tsp 1/2 sugar

  • 1 tbsp 1 garlic salt

  • Dipping Sauce
  • 2 tbsp 2 Kewpie Mayo

  • 1 tsp 1 chili crunch oil

Directions

  • Fry basil in hot frying oil for a few seconds until crispy and set aside.
  • Slice mushrooms into bite sized clusters.
  • Mix flour, tapioca starch, and water.
  • Coat mushroom clusters in the batter and fry in the same oil that we used for the basil. It is ready when it’s a golden color and crispy all around which should take about 3 minutes. Let the mushrooms rest for a few minutes then double deep fry for a few seconds at a higher temperature to get it extra crispy.
  • Mix garlic powder, five spice, chili powder, sugar, and garlic salt.
  • Sprinkle seasoning over the mushroom and bail after fry.
  • Mix mayo and chili crunch oil for dipping.
  • Enjoy!
