Ingredients

  • 2 strips pork belly

  • 1 tbsp kosher salt (to salt the boiling water)

  • 1 tbsp vinegar

  • 1 tbsp kosher salt (to rub onto the pork belly skin)

  • green onions

  • cilantro

  • frozen bao buns

  • Sweet Savory Sauce
  • 1/4 cup hoisin sauce

  • 1 tbsp soy sauce or coco aminos

  • 1 tsp sugar

  • 1 tsp rice vinegar

  • 2 thai chilis

Directions

  • Boil water and add kosher salt, boil the pork belly strips for 20 mins.
  • Dry the pork belly strips with a paper towel and make slits along the skin with about 1/2 inch spacing, make sure to not cut all the way through the layer of fat, the slit should be about 1/2 cm. Brush vinegar onto the skin and rub kosher salt on top to break down the skin. Rest for 20 mins and wipe off the excess salt.
  • Air fry pork belly strips with skin facing up for 30 mins at 215F degrees then 20 mins at 400F degrees.
  • Steam the frozen bao buns according to instructions on package.
  • Mix the sweet savory sauce ingredients together.
  • Thinly slice green onions into 3 inch strips and roughly chop cilantro.
  • Assemble with sliced pork belly, sauce, green onions, and cilantro inside the freshly steamed baos.
  • Enjoy!
