I’m not a fan of most salads, but this one..oh my! Never thought I could crave a salad this much. The creamy mayo based sauce mixed with all the fresh veggies like cucumber, onions, cilantro is so refreshing. The addition of mango brings the perfect sweetness to the salad. The crispy wonton chips to pair with this kani salad is the cherry on top. I am a texture girl through and through, so this crunch element to any salad I eat is essential. This is also a great dish to bring to potlucks and get ready to have everyone asking what’s the recipe?

Ingredients

  • 2 cups 2 imitation crab

  • 1 cup 1 cucumbers

  • 1 cup 1 mangos

  • 1/2 cup 1/2 green onions

  • 1/3 cup 1/3 red onions

  • 1/3 cup 1/3 masago

  • 1 tbsp 1 sesame seeds

  • Dressing
  • 1/3 cup 1/3 mayo

  • 1/4 cup 1/4 Chinsu Hot Sauce or Siracha

  • 1/4 cup 1/4 eel sauce

  • 1 tbsp 1 sesame oil

  • 1/4 cup 1/4 rice vinegar

  • 1 tbsp 1 sugar

  • Other Ingredients
  • wonton skins

  • fried onions

  • tempera crunch

Directions

  • Slice cucumbers, mango, red onions, green onions and shred imitation crab sticks
  • Mix all dressing ingredients
  • Mix everything in a big bowl
  • Deep fry wonton skins until golden brown
  • Top salad with drizzled eel sauce, green onions, and crispy fried onions
  • Enjoy!
